What an exciting time of year. School is back in session and iRun4Life is gearing up for another successful year. We have added new board members, new advisory roles and new committees. A couple of new schools have joined iRun4Life and we are in the final stages with several more.
I want to take this time to thank two of our previous board members Chrissy Grube, who will now be joining us in an advisory role, and Dave Gehman. Their insight and vision helped shape iRun4Life into what it is today. As we continue to grow and expand our love of running to children in elementary schools we know there will be questions about children and running. To help us address these questions, The iRun4Life Inside Track Newsletter will have a section dedicated to running questions. These questions will be answered by Casey Meizinger, one our new board members. Casey is a resident doctor who is an avid runner herself and has a degree in exercise science. Welcome Franklin Township Elementary School in Franklin, NJ and Seylar Elementary School in the Penn Ridge, PA school district! Lori Bird is the director at Franklin Township and Amy Hejnar is the director at Seylar Elementary. We're glad to have you join us!
Meet Our New Board Members
Beth Gray has joined the board as Vice President in charge of events. Beth has been Linden Elementary Schools running director and has been a member of the race committee for a number of years. To learn more about Beth click here.
Casey Meizinger joins the board as Vice President. Casey is a resident doctor who is also a Certified Strength and Conditioning Specialist.
Kelli Sickles joins us as Treasurer. Kelli's expertise and enthusiasm is a great addition to the board.
Recipes for Runners
Love Chicken and Noodle soup or Rice and Vegetable soup? Who doesn't? It's a winter comfort food. This fast, easy, healthy soup tastes a million times better than canned soup. It is easily adaptable to be made vegetarian or gluten-free.
Better than Canned Soup
6 cups chicken or vegetable stock
1 cup brown rice OR 1/2 bag whole wheat egg noodle
2 cups cooked chopped chicken breast (optional)
3 carrots, peeled and chopped
2 stalks celery with leaves, chopped
1/2 cup sweet onion, finely chopped
1 clove minced garlic
1 Tbsp oil
2 tsp butter
Salt and pepper, to taste
Sauté chopped carrots, celery, and onion in oil and butter until softened, about 5 minutes. Add garlic and cook 2 minutes. Add stock and bring to boil. Turn down to a simmer for 15 minutes. Then add chicken, if using, rice OR noodles. Let cook 5-10 more, or until rice/noodles are cooked.
Serve with salad, grilled cheese, or a big bowl by itself.
