Peas and Bacon Snack


1 clove garlic


5 ounces frozen peas (thawed out)

1 to 2 tablespoons crème fraiche (mascarpone or cream cheese is fine)

1 to 2 tablespoons grated Parmesan or pecorino

1/2 teaspoon dried mint

Special equipment: Food processor


Put thawed out peas into a food processor, or blender, and add the garlic, crème fraiche, cheese, and dried mint. Puree the peas until smooth and check the seasoning, adding salt if you need to.

Tip: Put the pureed peas into a bowl and warm. Spread it over crunchy toast and top it with a few bits of bacon.
